Each dish is for me a work of art, a sensory experience that I wish to share with those who have the pleasure of savouring it.

Chapter Two

My Culinary Journey

I began my professional journey at the restaurant Sapore in Rome, where I honed my skills as a commis, focusing on fish preparation and sauce making. My career continued at Bastianelli al Molo in Fiumicino, where I was responsible for the starter team. Subsequently, I worked at Verace in Rome, where I had the opportunity to create and oversee a menu centred on Italian cuisine. My experience was further enriched at Casa Vissani, a Michelin-starred restaurant, where I managed the detailed preparation of dishes. In London, I worked at Soho House - White City House and Pizzeria Alto by San Carlo, where I developed vegetarian, vegan, and gluten-free menus. My journey finally brought me to Blueside Restaurant in Italy and currently to V Lounge Beach in Rome, where I continue to explore and innovate in the role of sous chef.
