Chapter Two

My Culinary Journey

I began my culinary journey as an apprentice cook at the Hôtel Président in Forte dei Marmi, where I learned the importance of discipline and precision. My journey then took me to the Restaurant L'Espadon at the Hotel Ritz Paris, an experience that allowed me to refine my skills under the guidance of renowned chefs such as Michel Roth. I had the honour of working at the Relais Château Bernard Loiseau, a three Michelin-starred restaurant, where I perfected my technique in handling fish garnishes. Subsequently, I held the position of chef de partie at the restaurant Il Carpaccio at the Hotel Palace Royal Monceau, another temple of starred gastronomy. Each experience has helped shape my unique style, which combines the refinement of French cuisine with the rich culinary traditions of the Middle East.
