My Culinary Journey

I began my professional journey after graduating from the Buontalenti Hospitality Institute in Florence, where I honed my culinary skills. My career took off with the opening of 'Springfield Café', an American food venue that allowed me to explore new culinary horizons. Subsequently, I decided to return to my Tuscan roots, working at the 'Il Torrione' Trattoria, where I had the opportunity to revisit traditional dishes such as pappa al pomodoro. My thirst for knowledge led me to experiment with molecular cuisine, a field I explored with passion and dedication. I then held the position of Executive Chef at 'Villa Castiglione' and 'Convivio', where I was able to express my creativity and leadership. Currently, I am the Executive Chef at 'Villa Bibbiani' and 'Dimora Il Ghirlandaio', where I continue to perfect my culinary art through the management of à la carte restaurants and the organisation of exclusive events.
