I am Angelo, a Michelin-starred chef, born in Monopoli, in the heart of Puglia, a land I hold dear. From a young age, I learned the value of hard work and dedication, growing up in a humble family with my mother, a seamstress, and my father, a farmer. I started working at the age of six, and the memory of those days still accompanies me, guiding the respect I have for every ingredient. My cuisine is a fusion of technique and territory, a culinary narrative that blends Puglian tradition with flavours from around the world. After travelling and working in Asia, I returned to my homeland to tell the story of Puglia with a new voice, enriched by my experiences abroad. In my restaurant, I welcome a few guests at a time because I believe that true luxury lies in care and total attention. Every dish is a story I wish to share, an experience that goes beyond mere astonishment.

Chapter Two

My Culinary Journey

I began my culinary journey attending the hospitality school in Castellana, where I had the opportunity to work alongside my one true mentor, the pastry chef Mino Allegrini. This period profoundly marked my career, teaching me discipline and the fundamentals of culinary art. I was fortunate to train in the great kitchens of Rome, inspired by the school of Gualtiero Marchesi, an experience that refined my technique and approach to cooking. My thirst for knowledge led me to spend twelve years in Asia, working in cities like Jakarta, Hong Kong, Shanghai, and Mauritius. These years of travel enriched my culinary repertoire, allowing me to integrate diverse flavours and techniques into my cuisine. Upon returning to Puglia, I opened my own restaurant, where I had the honour of earning and maintaining a Michelin star, a recognition that celebrates my dedication and passion for cooking.

Becoming a Private Chef

I love bringing haute cuisine directly into the homes of my guests, offering a personalised and intimate experience that reflects my culinary philosophy. I believe every meal should be a unique event, where the quality of ingredients and attention to detail come together to create an atmosphere of genuine hospitality. My transition towards a more personalised service was born from the desire to share my passion in a more exclusive setting, where I can fully dedicate myself to the needs and tastes of my guests.
