Chapter Two

My Culinary Journey

I began my culinary journey as the owner and chef of the Spaghetti House Restaurant in Grado, where I honed my skills for six years. Subsequently, I had the opportunity to work as a sous chef on the cruise ships Grand Princess, Tahitian Princess, and Dawn Princess, sailing through the Mediterranean and Caribbean routes. These experiences allowed me to develop a deep understanding of international cuisines. I then landed in Jamaica, where I served as chef de cuisine at the Hyatt Zilara Rosehall & Hyatt Ziva Rosehall, managing a team of 15 cooks and elevating the Italian restaurant Di Roza to the pinnacle of guest satisfaction. Upon returning to Italy, I worked in several renowned restaurants, including 'La Caina' Fish Gourmet in Grado and 'Acero Rosso' Restaurant in Lignano Sabbiadoro. Each experience enriched my culinary repertoire, allowing me to create menus that reflect my passion for fusion and gourmet cuisine.

Chapter Three

Becoming a Private Chef

My passion for personalised service led me to explore the role of a private chef. I had the honour of working as a personal chef for a Russian magnate in Moscow, an experience that refined my ability to create bespoke culinary experiences for the most discerning palates. This transition allowed me to fully dedicate myself to the art of customising every detail, from ingredient selection to final presentation, ensuring an unforgettable culinary experience for each guest. I love bringing haute cuisine into my clients' homes, transforming every meal into a unique and memorable event.
