Chapter Two

My Culinary Journey

I began my culinary journey at the I.P.S.S.A.R. P. Artusi Hospitality Institute in Recoaro Terme, where I acquired the foundations of professional cooking. My career has been enriched by experiences in some of the most prestigious restaurants in Italy and Europe. I had the honour of working at Osteria Francescana in Modena, a Michelin-starred restaurant that taught me the importance of precision and creativity in the kitchen. Subsequently, I honed my skills at Ristorante Arnolfo in Colle di Val d'Elsa, under the guidance of Chef Gaetano Trovato. I held the position of Chef de Partie at the Belmond Hotel Cipriani in Venice and the Resort Valle dell'Erica Thalasso & SPA in Sardinia, where I developed my ability in managing sections and leading the kitchen team. My experience as Executive Chef at vigilius mountain resort in Alto Adige allowed me to fully express my culinary vision, creating tasting menus that celebrate the quality of local ingredients.
