Chapter Two

My Culinary Journey

I began my professional journey with a deep dedication to the kitchen, working at the 'Quattro Passi' Restaurant in Nerano, Salerno, awarded two Michelin stars. Here, I honed my skills in the preparation and presentation of dishes under the guidance of expert chefs. Subsequently, I had the opportunity to work as a sous chef at the 'Pan-Dei' Palais in Saint-Tropez, an experience that allowed me to further grow in managing a high-class kitchen. I then continued my culinary journey at Rosewood Castiglion Del Bosco in Montalcino, Siena, where I served as executive sous chef, promoting open and constructive dialogue with my team. My experience was further enriched at the 'La Dogana' Restaurant by Enoteca La Torre in Capalbio, Grosseto, where I was able to express my creativity through the creation of seasonal and innovative menus. Finally, as chef de cuisine at the Grand Hotel Victoria in Menaggio, Como, I had the honour of designing menus that reflect the identity of the restaurant, consolidating my reputation in the Italian gastronomic scene.
