I am Dalila, an Italian chef by origin, born and raised in the vibrant city of Bari, in Puglia. My passion for cooking was born amidst the aromas and flavours of Mediterranean tradition, which I have always considered my muse. I have always believed that cooking is an art that speaks to the heart, a universal language that unites cultures and people. My career has been driven by an incessant desire to explore and innovate, embracing world cuisines and blending them with Italian roots. Every dish I create is a sensory journey, an experience aimed at delighting and surprising, while respecting today's dietary needs. I am deeply convinced that cooking should be a balance between tradition and innovation, where the quality of ingredients is always centre stage.

Chapter Two

My Culinary Journey

​My journey began when I was just a young girl; at the age of 16, I was working at my aunt's bakery in Bari, Panificio Signorile, which marked the start of my career. The real challenges began in Berlin, where I was selected by some of the world's finest hotels, including the Hilton, Hotel Indigo, Essentis Bio Hotel, Almodovar, and the Waldorf Astoria.
​I then continued my career in Kössen, Austria, at the Zum Sternenhof Hotel, and in Tuscany at the 5-star Terme di Saturnia Resort, before returning to my beloved Puglia to work at Torre Maizza - Rocco Forte Hotel and Masseria Calderisi in Savelletri.
​For the past year, I have been teaching culinary arts and hospitality to compulsory school students, while also working as a private chef for my beloved clients

This passion for personalised service drives me to constantly innovate, always seeking new inspirations and techniques to surprise and delight those who have the privilege of tasting my dishes.

I am particularly skilled in the art of pastry, where precision and creativity meet to create desserts that are true works of art. Every dish I prepare is designed to be a complete sensory experience, where attention to detail and the selection of high-quality ingredients are always paramount. My cooking is a reflection of my personality: creative, passionate, and always in pursuit of excellence.
