Chapter Two

My Culinary Journey

I began my professional journey at La Brace Torre Canne in Fasano, where I honed my skills as a chef de partie, focusing on preparing dishes that reflected the quality and authenticity of Italian cuisine. Subsequently, I had the opportunity to work at Sala Ricevimenti Villa Imperiale, also in Torre Canne, where I developed my managerial skills, recruiting and training the kitchen brigade. My experience was further enriched at the Antica Trattoria di Sacerno in Bologna, where I worked as a commis, learning to handle work under pressure and maintain high standards of hygiene and food safety. I then had the honour of collaborating with Chef Salvatore Amato at I Conoscenti in Bologna, where I refined my technique in preparing gourmet dishes. Finally, my career took me to Domaine des Hautes Fagnes in Belgium, under the guidance of Chef Angelo Sabatelli, where I consolidated my experience in preparing first courses and maintaining high standards in the kitchen.

My philosophy is to bring haute cuisine directly to people, creating personalised culinary experiences that reflect each client's tastes and preferences. I love the idea of offering a bespoke service, where every detail is attended to with the utmost care and where I can express all my creativity without compromise.
