I am Rinaldo, an enthusiastic Italian chef who has found his culinary home in Dubai. My passion for cooking originates from the traditions of my homeland, where food is a celebration of life. I love to create gastronomic experiences that combine authenticity and innovation, blending traditional Italian techniques with a modern approach. My cuisine is a sensory journey exploring Mediterranean flavours, maintaining a balance between taste and health. I have always believed that every dish should tell a story, and I am dedicated to ensuring that each creation reflects my commitment to quality and culinary perfection. Working in the United Arab Emirates, I have had the opportunity to share my culinary vision with an international clientele, enriching my repertoire with global influences.

Chapter Two

My Culinary Journey

I began my culinary journey in Italy, where I honed my skills in high-end dining environments. My career took off at Chalet Tovel in Trentino, where I managed kitchen operations in a luxury alpine restaurant, focusing on seasonal menus with local ingredients. Subsequently, I worked as a Chef de Partie at Hotel Biodola on the Island of Elba, operating in a high-pressure environment in a luxury hotel. My experience was further enriched at Vecchia Sorni and various prestigious hotels in Madonna di Campiglio, such as Hotel Bertelli and Hotel Majestic. Moving to the United Arab Emirates, I had the honour of leading the kitchen at Scalini Cucina in Dubai Mall, developing seasonal menus and conceptual dishes that reflect the brand’s identity. Before this, I contributed to the success of Monno Restaurant and Let's Café in Abu Dhabi, participating in their opening and the training of kitchen teams.

Becoming a Private Chef

My philosophy is to bring fine dining directly to the heart of people, creating personalised culinary experiences that cater to the unique desires of each client. Although my career has not yet led me to work as a private chef, my passion for personalised service is evident in every dish I create. I love the idea of offering an intimate and bespoke culinary experience, where every detail is meticulously crafted with precision and care. My dedication to quality and customer satisfaction drives me to continually seek new challenges and opportunities to expand my culinary repertoire.

My specialisation lies in authentic Italian cuisine, which I interpret with a modern approach to suit the dynamic environments of today’s restaurants. I am distinguished by my ability to combine traditional techniques with efficient execution, ensuring that every dish not only meets but exceeds the expectations of my guests. I am particularly skilled at creating seasonal menus that enhance the natural flavours of ingredients, maintaining a balance between taste and health. My attention to detail and ability to maintain high culinary standards even under pressure have allowed me to excel in high-volume dining environments.
