About Me

I am Rinaldo, an Italian by origin who found his calling in the kitchen. My passion for cooking is a journey intertwining tradition and innovation, a path that has led me to explore diverse flavours and techniques. Every dish I create is a reflection of my dedication and culinary curiosity. I love the art of baking and dedicate myself daily to the study of bread, both in theory and practice. My international experience has taught me to appreciate every ingredient, choosing it with care to enhance its intrinsic qualities. I am convinced that cooking is a universal language, capable of telling stories and evoking emotions through authentic and harmonious flavours.

Chapter Two

My Culinary Journey

I began my culinary journey with humility and determination, working in various restaurants that shaped and inspired me. I had the honour of participating in the 'Chefuoriclasse' cooking course by Antonino Cannavacciuolo, an experience that refined my skills and strengthened my passion for Italian cuisine. My career took me to Australia, where I served as Chef de Partie at a'Mare Restaurant, specialising in starters, main courses, and sauces. Subsequently, I became Head Chef at Bloody Mary's Gazebo, where I had the opportunity to create new menus and train the staff. My journey then led me to Dubai, where I am currently the Head Chef at Monno Restaurant, a traditional Italian restaurant that allows me to best express my creativity and culinary expertise.

Becoming a Private Chef

My philosophy is to bring haute cuisine to a personal and intimate level, where every dish is designed to satisfy the unique tastes and needs of my guests. I love the idea of creating bespoke culinary experiences that go beyond a simple meal and become unforgettable moments. My approach to personalised service is based on attentive listening and meticulous attention to detail, elements I consider fundamental to offering a truly exclusive gastronomic experience.

My specialisation lies in my ability to combine traditional culinary techniques with a touch of innovation. I am particularly skilled in preparing starters, main courses, and sauces, skills I honed during my experience as a Chef de Partie. Moreover, my passion for baking sets me apart, as I dedicate time and effort to studying baking techniques, both theoretically and practically. I firmly believe that the choice of ingredients is crucial, and I am committed to selecting the freshest and highest quality ones to enhance the authentic flavours of each dish.

My cuisine reflects an international experience, enriched by diverse culinary influences I have encountered along my professional path.
